PARTNERSHIPS—when founded on mutual trust, vision, and respect—can create lovely and lasting outcomes, and such is the case of the partnership between John Tinios and Chef Steve James. Always impressed and inspired by the beautiful and delicious pastries and baked goods created by Chef James—the star bakery chef of The Balsams Grand Resort—John knew the two would one day work together in some capacity. In the year 2006, the spark became a flame when the general manager of The Balsams notified John saying that Chef James was available for consulting. The two men—John and Steve—immediately knew there was more to their chemistry than a consulting agreement and, soon, they developed the concept of Popovers On The Square, in Portsmouth, New Hampshire.

In 2006, John Tinios, who’s family owned a local hot-spot The Galley Hatch fully branched out on his own for the first time and opened Popovers on the Square in Portsmouth, NH with his business partner, Steve James. Located in charming Market Square, Popovers evolved into a lively cafe and award winning bakery featured on multiple travel blogs.

John & Steve open up an offsite bakery production facility, The Commissary, to keep up with demand. Each morning bakers arrive around 3:00am to prepare cakes and pastries to be delivered fresh to each of the restaurants. Today, guests can order signature cakes from their online bakery, orders are then prepared at The Commissary and delivered to designated pick-up locations- all before 11:00AM.

Co-owners of Popovers on the Square, John and Steve, open up their second location in Epping, NH. Popovers at Brickyard Square featured all of the classic cafe signatures with the addition of a bustling bar and dinner menu.
